Paper presented at the Sorghum Food Enterprise and Technology Development in Southern Africa Workshop held in Lusaka, Zambia from December 6-9, 2010. Introudction: Many excellent foods have been produced from sorghum and millets with increasing numbers of very successful, profitable products. Sorghum has outstanding potential to produce a wide variety of foods ranging from staples to special healthy foods. It has tannins, a wide variety of phenolic acids and other phytochemicals with significant health potential.
